This Sicilian heirloom turns a beautiful deep purple as it matures.  More often planted in the summer for a fall crop, as color intensifies in the cooler weather.  Purple cauliflowers tend to be easier to grow than white varieties, and are less susceptible to aphids and cabbage worms, which prefer to blend into a green background.  A real showstopper on vegetable platters or raw in salads.  When cooked, the color changes to green, but it still maintains is excellent flavor.  This variety forms side shoots after the main head is cut, for an extended harvest.
