Hailing from Appalachia, legend says that this bean was found inside the craw (gizzard) of a wild turkey in 1802, and was saved and planted by the hunter who found it. Is the legend true? Maybe, but at least we still have this pretty buff and white speckled bean! Turkey Craw is a dual purpose bean that can be picked as a tender and flavorful snap bean, or as a tasty and meaty dry bean. It has long been a popular cornfield bean, and is an excellent canner and freezer. Around 80 days to snap, and 100 to dry.
